Vegetarian Thanksgiving Feast

So you've decided to host Thanksgiving dinner this year...

Why not skip the turkey and offer a beautiful Thanksgiving feast made primarily of ... veggies? This vegetarian menu for Thanksgiving dinner will keep your guests satisfied and thankful!

1. Appetizers:

As your guests arrive,
a great appetizer course is a must! Here are a few ideas to get you started:

Fig and Mascarpone Amuse-Bouche
Endive Boats Topped with Beets and Goat Cheese
Dates Stuffed with Blue Cheese and Walnuts
Roasted Tomato and Garlic Crostini

2. Main Meal:

For the main meal, I chose a showstopper! Give each person their own Chickpea, Tofu and Spinach stuffed buttercup squash to carve and savor. This will definitely impress all your relatives - even the picky ones!

Dips and Spreads:

While people are enjoying their own squash, have a few other sides on the table that your guests can pass around and share. Have a basket of fresh breads or crackers available with some fun dips such as:

Thai Sweet Potato Coconut Spread
Olive Tapenade
Veggie Pate
Baked Ricotta with Lemon Zest and Thyme

4. Vegetable Sides:

This meal deserves some fantastic vegetable sides, like my delectably sweet and sticky Honey and Orange Roasted Carrots, Grilled Oyster Mushrooms and Roasted Baby Artichokes, carrots, cauliflower and baby potatoes which are rich both visually and in flavor! Instead of stuffing, here's a great dish that is moist and gratifying: Spicy Couscous with Chickpeas and Nuts - it definitely fits the role!

5. Dessert:

Time for dessert! Try this absolutely stunning Elegant Pear and Nectarine Tart as a fresh break from the traditional pumpkin pie.
