Spinach and Zaatar Crispy Tart -

A great appetizer for a dinner party or a brunch item. Zaatar is a middleeastern spice mixture that contains thyme, sesame seeds and sumac. It is very flavourful!

  • 1 Package Dry Active Yeast
  • 1 Tsp. Sugar
  • 1 Tsp. Salt
  • 2 Cups White Flour
  • 1 Tbsp. Vegetable Shortening
  • 1 Cup Warm Water
  • 1 Tsp. Vegetable Oil
  • 1 Clove Garlic, Chopped
  • 1 Jalapeño, Chopped Finely
  • 1 Onion, Peeled and Diced
  • 1 Cup Spinach, Chopped (Fresh or Frozen)
  • 2 Tbsp. Zaatar
  • Salt and Pepper, to taste
  • 2 Tbsp. Black Olives, Pitted and Diced
  • 1 Tbsp. Olive Oil


  1. To make the dough: Combine the yeast with the sugar and salt and ½ cup of the flour. Mix in the shortening. Add the warm water and mix well.
  2. Add the remaining flour a little at a time until a soft dough forms. Let stand covered with a damp cloth for about 30 minutes.
  3. Meanwhile, in a Sauté pan over medium low heat cook the topping. Add the oil with the garlic, jalapeño and onion. Sauté for about 2 minutes. Add the spinach and zaatar. Sauté for 2 more minutes. Add salt and pepper.
  4. Place a drizzle of olive oil in a large rectangular baking sheet. Roll out the dough and stretch it out with your hands to fit it into the baking sheet. Place the warm spinach mixture on top of the dough. With your hands press the mixture into the dough. It will help you spread the dough really thinly. Sprinkle with the feta and olives.
  5. Bake in a preheated oven at 350 for 20 minutes.
