Hummus -

This is a class Middle Eastern appetizer dip. It is great on its own served with pita or vegetables. It can also be used as a versatile condiment or sandwich spread.

  • 2 Cups Chickpeas
  • 2 Tbsp. Olive Oil
  • 2 Tbsp. Tahini
  • 1 Lemon
  • 1 Garlic Clove
  • 2 Tbsp. Water


  1. Combine the chickpeas with the garlic, tahini, olive oil and water in a food processor or blender. Blend until smooth.
  2. Squeeze the lemon and add the juice to the chickpea mixture along with salt and pepper.
  3. Place in serving dish and serve with pita or fresh vegetables for dipping.
  4. For a nicer presentation, you can top the dish with a few chickpeas, a sprinkle of paprika and drizzle with olive oil.
