Passover Recipes without the Meat!

Passover is a Jewish holiday that is celebrated every year in early spring. Click here if you would like more information about this holiday...but for now let's get straight to the recipes!

This year you will not spend the 8 days of Passover HUNGRY! I have developed many delicious vegetarian Passover friendly recipes for meals and snacks! Below are my favorite mains, pastas, soups, snacks and dips. Click here for my complete list of meals and snacks for Passover.

I. Main dishes:

1. Spanish Tortilla

In this popular Spanish dish – Tortilla is translated to omelette, usually made with potatoes and egg. I like to add sweet potato for a really nice contrast, everything bakes until slightly souffléed and golden brown!

2. Eggplant and Tomato Towers

This recipe will really wow your guests! It is just so beautiful and has such deep and complex flavours, but yet it is just so easy to prepare

3. Quinoa with Grilled Onions, Asparagus and Orange Segments

Quinoa is a super grain because it is one of the few foods that provides vegetarians with a complete protein. This salad is particularly nice because of the colour and texture contrasts. I find grilling the onions adds an extra element of flavor while the orange segments are really nice as they burst in your mouth!

4. Aloo Gobi

This is a traditional Indian Curry. I find the potatoes and cauliflower go so nicely together for a hearty comforting meal. If you do not eat peas during Passover, just leave them out!

1. Spaghetti Squash with Pesto and Roasted Tomatoes

The strands of spaghetti squash are combined with roasted tomatoes and pesto in this dish to make a great light alternative to pasta that is just bursting with flavor!

2. Peanutty Cucumber "Noodles"

This is a great refreshing “noodle” salad – where the noodles are made entirely of ... cucumbers!!

3. Cauliflower Rice

This rice is actually made from .... yes... cauliflower!!! It looks and feels just like rice – without all the guilt! Great for topping with stews and curries!

4. Zucchini Noodles in Garlic Butter Sauce

This is a really decadent pasta dish – even though there is no actual pasta in it! If you do not use corn during Passover, replace the cornstarch with potato starch here.

III. Great Soups: There's nothing like a soup for a perfect Passover lunch or starter for your Seder meals!

​1. Creamy Kale Soup topped with Kale Chips

This is a great soup to serve as a first course if you want to really impress company! The delightfully creamy soup is topped with an unusual soup topper- kale chips. They add a slight crispness in every bite that brings this soup to a whole new level

2. Roasted Carrot and Dill Soup

Roasting carrots to bring out their natural flavors and sweetness! In this soup, you won’t believe just how well the fresh dill pairs with the carrots!

3. Roasted Tomato Soup

This is a light soup with incredibly deep flavors! That is thanks to the caramelization achieved by roasting the tomatoes on high heat before pureeing them.

IV. Snacks!
Are you constantly looking for things to snack on during Passover? Here are a bunch of ideas for Passover approved foods to snack on!

1. Kale Chips

Kale chips are all the rage right now! Just as crispy and addictive as potato chips without all the guilt!

2. Shoestring Potatoes

So yummy! Pull apart and eat! They come out crispy and delicious - from the oven - no deep frying here!

3. Crispy Leek Chips

Oooh yes I did say leek chips! Crispy and light - kinda a cross between a french fry and an onion ring!

4. Dates Stuffed with Blue Cheese and Walnuts

A really fun appetizer or snack that tastes fancy and sophisticated with only 3 ingredients!

V. Dips and Spreads - Tired of matzah with peanut butter? Here are some great ideas for spreads or dips for your matzah or veggies:

1. Sweet Potato and Coconut Spread

This dip has really special flavor combinations! I love it on Matzah or for dipping cucumbers.

2. Olive Tapenade

This is a classic spread made from olives and sundried tomatoes - goes great with a glass of wine!

3. Smoky Eggplant Spread

This eggplant is so creamy and smoky - can be served as a side salad or spread!
