This dish is best assembled last minute, but you can prep all the ingredients a few hours before serving and just mix last minute. The watermelon is best cold in this dish, so try to keep it in the fridge before assembling.
Roasted Tomato and Gruyere Tarts
This is a really nice tart to serve for a lunch get together with a big salad or as something to munch on with a big bowl of soup! You can roast the tomatoes up to 1 week in advance and store in the refrigerator in an airtight container.
Swiss Chard and Halloumi Frittata
This is a great meal for a light dinner, served with a side salad or roasted potatoes. It’s jam packed with greens and the halloumi adds a really nice salty contrast! I use a cast iron skillet here which makes a really nice presentation plus it is oven safe. If you don’t have one, just use a regular pan to sauté the veggies and then transfer into an oven safe baking dish and top with the eggs. Bake as directed.
This is a really great spread for your morning bagel or some crackers for an afternoon snack! It’s a wonderful alternative to peanut butter! This recipe will make about 1 cup of Almond Butter. It will store in an airtight container in the refrigerator for about 1 month. Note that in order to get proper consistency on this butter you need a really powerful blender such as a Vitamix or a Ninja.

When swiss chard is in season make this pizza! It tastes so fresh and delicious! The little crunch from the walnuts adds such a nice surprise texture!

This is a delicious and hearty lunch time salad. You can eat it hot or cold, but I have to say I really prefer eating it hot! If you are taking it for a lunch at the office, just place all the ingredients in a Tupperware and microwave when ready to eat.
