Whenever I make a fondue dinner, I always prepare way more of the veggies and sauces than I need. I know it will really help me out with easy dinners during the week.
Here are some of my favorite ideas for using your leftover fondue ingredients for quick suppers during the week:
1. Big Asian Vegetable and Noodle Soup
Drop any leftover chopped veggies and tofu with a handful of udon noodles into your leftover broth and allow to cook for about 5 minutes! If you want to flavor it up, add some fresh ginger, star anise and soya sauce to your broth or even simpler add a couple of tbsps. of your leftover teriyaki sauce.
2. Pasta with Pesto and Veggies
Boil your favorite pasta. On the side, saute any leftover veggies and toss it all together with your leftover pesto sauce.
3. Balsamic Roasted Veggies
Preheat your oven to 400 and toss your leftover veggies with the remaining balsamic dipping sauce. Place on a parchment lined baking sheet and bake for 20-25 minutes.
4. Teriyaki Veggie Stir Fry:
In a skillet over medium high heat, Srir fry your leftover veggies and tofu with the remaining teriyaki sauce for about 5 minutes until tender.
5. Crudite for the Office!
You can also just eat any remaining veggies as a snack at work and use any of your leftover sauces as a dip!
