Edamame Udon Noodle Soup -

This is a delicious soup with a fun Asian twist. In this soup I make a quick Vietnamese style broth, that gets its deep color from onion peels! I then throw in some protein packed edamame beans and udon noodles for a seriously satisfying meal!

  • 4 cups Water
  • 1 Star Anise
  • 1 Inch Piece Fresh Ginger
  • 2 Tbsp. Soya Sauce
  • 1 Thai Chili, halved
  • 1 Small Onion
  • 100 Grams Udon Noodles
  • ½ Cup Frozen Shelled Edamame
  • 1 Cup Chopped Nappa Cabbage


  1. Peel the onion and place the skin in a large pot with the water, star anise, ginger, chili, and soya sauce. Bring to a boil and cook for 10 minutes.
  2. Using a slotted spoon, remove all ingredients from broth and discard.
  3. Slice up the onion and add it to the broth and bring back to the boil. Cook for 5 minutes, then add in the noodles and edamame. Cook another7 minutes until noodles are soft. Finally add in the nappa cabbage and cook for about 1 minute more and serve.
