Recipe for Corny Kale Chickpeas

Corny Kale Chickpeas -

This is a delicious and hearty lunch time salad. You can eat it hot or cold, but I have to say I really prefer eating it hot! If you are taking it for a lunch at the office, just place all the ingredients in a Tupperware and microwave when ready to eat.

  • 1 Can Chickpeas, drained and rinsed
  • 1 Can Corn, drained and rinsed
  • 10 Stalks fresh Kale, stalks removed and roughly chopped
  • 2 Tbsp. Olive oil
  • 1 Tsp. Paprika
  • 1 Tsp. Salt, or to taste


  1. In a large microwave safe bowl, combine all ingredients. Microwave on high for 3 minutes, if desired.
