Tarts and Quiches
Fruit Platters, Puddings and Breakfast Bars
Frozen Coconut Pineapple
A great simple and healthy treat for breakfast, dessert or after workout snack! After you make these treats, store in a Ziploc or airtight container in the freezer for up to 2 months. Take one out whenever you have a craving for a guilt free treat!
These pancakes use chickpea flour to create a protein packed guilt free breakfast! Make a big batch and freeze for busy mornings!
Caramel Apple Dutch Baby
A Dutch Baby is a classic German pancake / popover served for breakfast. In this version, I have a little cheat to make it super simple to prepare – pancake mix! I do recommend serving immediately after this dish comes out of the oven, otherwise the caramel will harden and get stuck to the bottom of your skillet (it won’t come out nicely). If you want to slice a few pieces after the caramel has hardened, just pop it back in the oven for 5 minutes to make it easy to slice once again!
Vegan “Egg” and Spinach Breakfast Wrap
Oh wow are these little sandwiches delicious! The best part is you can make a big batch and freeze them. When busy mornings come around place a couple in the microwave and enjoy!
Vegan Spinach Omelette
Between the tofu and spinach you will feel fueled for the day with this delicious breakfast!
Vegan Scrambled “Eggs”
Try this delicious alternative to the classic scrambled eggs breakfast using protein packed tofu!
Crockpot Oats with Pecans and Raisins
Is there really anything better than waking up to a warm hearty breakfast waiting for you in the morning? I didn’t think so!
Canary Melon Strawberry Smoothie
This is a deliciously refreshing breakfast drink!
Berry Tangerine Smoothie
A delicious breakfast smoothie with a taste of sunshine!
Pear and Ginger Galette
This is just a spectacular dessert to serve at the end of a sit down dinner party! You can poach the pears up to a week in advance and then assemble the tart the day of your party.
Ginger Poached Pears
Pears and ginger love each other’s company in this beautiful poached treat! This can be served for an elegant dessert or brunch. If you would like to prepare in advance you can store the pears in an airtight container with the poaching liquid for about a week. Be sure to keep the liquid even after the pears are eaten – it is great to sweeten up your morning smoothies!
Pecan Pumpkin Spice Bread
This is truly scrumptious bread for breakfast, an afternoon tea or even a dessert. Freshly roasted squash in combination with the molasses and spices make this bread a special treat!
Pumpkin Pie Smoothie
Yes I did say pumpkin pie smoothie!! This creamy smoothie is made with puréed butternut squash and pumpkin pie spices – so refreshing and delicious!
Oooh yes Apple Nachos! Crisp apple slices are layered with melted peanut butter, caramel and toasted nuts – what could be better! This is a great “healthy” treat to have while watching a big game without the guilt!
Roasted Tomato and Garlic Cornbreads
These mini cornbreads pack a lot of flavour from the roasted tomatoes and garlic! I made them in mini loaf pans for a fun presentation, but you can also use a full sized loaf pan instead.
Roasted Tomato and Gruyere Tarts
This is a really nice tart to serve for a lunch get together with a big salad or as something to munch on with a big bowl of soup! You can roast the tomatoes up to 1 week in advance and store in the refrigerator in an airtight container.
Apple Date Quinoa Porridge
This is a great alternative to the classic oatmeal – using superfood quinoa! It’s also super delicious and satisfying!
Swiss Chard and Halloumi Frittata
This is a great meal for a light dinner, served with a side salad or roasted potatoes. It’s jam packed with greens and the halloumi adds a really nice salty contrast! I use a cast iron skillet here which makes a really nice presentation plus it is oven safe. If you don’t have one, just use a regular pan to sauté the veggies and then transfer into an oven safe baking dish and top with the eggs. Bake as directed.
Vegan Zucchini Date Bread
A really great healthy zucchini bread with no added oil! There is lots of zucchini in here to give it the moisture needed and the pure maple syrup doesn’t hurt either! This bread is perfect for a healthy breakfast or afternoon treat. It will store on the counter for 3-4 days or slice it up and freeze for about 6 months.
This is a really great spread for your morning bagel or some crackers for an afternoon snack! It’s a wonderful alternative to peanut butter! This recipe will make about 1 cup of Almond Butter. It will store in an airtight container in the refrigerator for about 1 month. Note that in order to get proper consistency on this butter you need a really powerful blender such as a Vitamix or a Ninja.
