A Puck of Soup For a Snack?

OK, this has to be the coolest thing I ever did with soup!

I absolutely adore eating soups, really any kind of soup will make me happy. Especially on cold days when I come home from work, there is nothing more comforting. The thing is, I admit soups are usually time consuming to make. Especially if you are putting lots of fresh vegetables into them; all the washing, chopping, and then they have to simmer for a long time - you know the drill!

So here it goes - next time you are making a soup why not double the recipe. It really doesn't add much to the workload to make extra. Now you are thinking, what do I do with all the leftovers?

I couldn't believe how easy this was...ready? Ok, take your leftover soup and ladle it into .........muffin tins! That's right, I said muffin tins! Then freeze!

The next day, take a towel soaked in warm water and gently rub the back of the muffin tins to release your soup pucks. Refreeze in large freezer bags. This works with almost any soup.

Now anytime you are craving soup, you have a single serving of a homemade soup that can easily be reheated in a small bowl or cup. This makes a great comforting, delicious and healthy snack, lunch or appetizer. Two pucks are great for a snack, and three or four are a meal. This is so much better than grabbing canned soups, or dried dehydrated soup packages which we all know offer no nutritional value whatsoever.
